Skillet Surprise

I made this last night for supper. My family loved it. It is one of those throw stuff in a skillet and call it supper recipes.  I thought I would share it.

 

1 1/2 pounds ground beef
1/2 of a medium onion chopped
1/4 of a green pepper chopped
1 can of diced tomatoes
1 small can of tomato sauce 6 – 8 ounces
Enough cooked rice for 4 people. I use instant brown rice.
1 package taco seasoning
1 tbsp minced garlic
1/2 tsp cumin
salt and pepper
cheddar cheese (optional)
Follow the directions on the bag of rice for cooking.
Saute the onion and green pepper in 1 tbsp oil or butter for about 4 minutes. Add beef and brown. Drain the mixture to get out any grease. Put it back in the pan with the 1 tbsp of minced garlic. Heat up for a minute stir in the diced tomatoes and tomato sauce. Use the tomato sauce can and fill it with water. Add the water too the mixture. Stir in the taco seasoning, cumin, and however much salt and pepper you like. Let it simmer for 10 minutes. Stir in the rice. Serve with shredded cheddar cheese.
I think you could add beans or black olives and it would make it rather tasty.
